Meet Helene Barsøe for an inspiring lecture on the importance of the gut to our health and well-being, followed by a fermentation workshop at Kurhotel Skodsborg with Brasserie Carl's chef Bendix Laursen.
Based on her holistic approach to health, Helene provides insight into how fermented foods can boost both digestion and energy in everyday life. After this, Bendix Laursen takes over and invites him to a workshop where he shares his passion for fermentation as a taster and technique. You will try your own fermentation with a wide selection of delicious ingredients that you can take home afterwards.

**About Helene Barsøe: **
Helene Barsøe works with health communication with a special focus on the importance of the intestine for our overall well-being. She is the co-author of the current book Mavero, in which she combines knowledge about gut flora, nervous system and lifestyle with concrete tools for a better digestion. In addition, she runs Heba Heba Kitchen, where she shares recipes and inspiration focusing on food that supports gut health and wellness.
Over a number of years she has dealt with fermentation, natural nutrition and lifestyle, and she is known for making complex topics accessible and applicable in a busy everyday life. Her approach is based on a combination of knowledge and practice - with the goal of creating sustainable habits that strengthen both body and mind.

Skodsborg – a healthy part of Denmark’s history

In 1852, King Frederik 7 bought the country house Skodsborg with his wife, Countess Danner, and together they spent their long, relaxing summers here until his death in 1863. Villa Rex was built in 1857 so that the king could hold councils of state, meetings and banquets without leaving the scenic surroundings of Skodsborg. Villa Rex has been renovated with respect for history and is now used for parties and meetings.
